There is nothing like enjoying the late afternoon sunset at Hotel Il Pellicano and it’s a rainbow of Mediterranean colours. Every summer, Hotel Il Pellicano lead bar man Federico Morosini mixes up the technicolour into masterful and unforgettable signature cocktails.
The ISSIMO cocktail was created at the Pellicano in one hot afternoon. The cocktail is very simple with only three ingredients and many summer vibes. I was inspired a little by the Italian tradition of peaches with fresh white wine. Not like Bellini, but wine with peach slices, a beautiful, simple and fresh aperitif. To achieve the colour of ISSIMO’s antique pink, I used the fresh juice from the Tabaccheria peachi. Of course, there must also be a bit of Pellicano soul and here is our magical and fragrant rosemary infused with white port wine, a classic summer wine that refers to a certain old-style glamor.~ Federico Morosi, Barman, Hotel Il Pellicano
Prepare in a shaker filled with ice and then pour into a nice martini glass or a nice elegant wine glass (leaving the ice in the shaker):
50 gr. fresh peach juice
40 gr. Porto Bianco infused with rosemary sprigs
A few drops of Chambord – a wonderful French liqueur made with cognac and berries used to perfume the cocktail and also to give a touch of antiquity to the pink color of the peach juice. Garnish with a slice of peach and a sprig of rosemary.
