At Pellicano Hotels, we love a bit of change. That’s all the truer when it comes to our most historical property, La Posta Vecchia.

La Posta Vecchia Makeover

In 2023, we gave our gem on the coast of Palo Laziale a bit of a makeover. This year, we’ve done it again – this time in the kitchen. Enter Da Aurelio, La Posta Vecchia’s newly reimagined restaurant, and the beginning of an exciting new chapter for the property.

Replacing the beloved The Cesar, Da Aurelio carries forward the legacy of impeccable hospitality and local flavour, while adding fresh energy and focus under the guidance of newly appointed Head Chef Andrea Barcia. A culinary nomad with roots in Trentino and experience stretching from London to Copenhagen, Barcia returns to the Pellicano family (his journey began at Il Pellicano in 2011) with a refined approach that blends technique, seasonality, and soul. “I am excited to be part of this new adventure,” he says. “The hotel, the surroundings – they will all be a big inspiration for Da Aurelio.

The restaurant’s new name pays tribute to Marcus Aurelius, Roman emperor and philosopher, and speaks volumes about the values behind the kitchen: wisdom, restraint, integrity. We like to think of it not just as a name, but a guiding ethos.

On the plate, expect a deeply regional celebration of Palo Laziale and Alto Lazio, with vegetables, herbs, and seafood sourced locally through La Posta Vecchia’s Il Dolce Far Bene initiative. There’s sustainability in the details, too, from Meat-Free Mondays to a strong connection to the land and community around the resort.

The menu nods to classic Italian traditions while embracing modernity, with a cuisine that feels familiar but elevated, humble but inspired. “A contemporary homage to Italy,” Barcia says.
