What’s cooking at La Posta Vecchia? A new gastronomic direction that pays homage to the flavours of Rome and Lazio cuisine, that’s what! Specially curated by Executive Chef Antonio Magliulo, this new culinary chapter invites guests to rediscover hero ingredients and timeless dishes that celebrate the region’s rich and diverse culinary heritage. Seeing as we volunteered to do the taste testing, we can safely say that this menu is not just an authentic experience of Roman cuisine, it’s an unforgettable taste of Italy to be savoured at our favourite romantic villa on the coast of Palo Laziale.
REGIONAL INSPIRATION AND RESEARCH
Lazio’s agri-food industry is at the heart of the region’s culinary character. From Pecorino Romano to Carciofo Romanesco, its fertile pastures, crops, vineyards and beyond produce top-quality, locally-grown ingredients that stars in classic Roman dishes like Cacio pepe and Vignarola romana. With the Palo Laziale coastline on one side, and an abundance of Lazio’s local growers and suppliers in close proximity, La Posta Vecchia is part of a treasured ecosystem that celebrates sustainability and community.

Rediscovering culinary traditions
There’s a long (and mouth-watering) list of ‘…alla Romana’ dishes with hero ingredients that are at the heart of Rome’s culinary heritage: carciofi, baccalà, puntarelle, porchetta…we’re hungry just thinking about them all! While you might have tasted many of them in restaurants across The Eternal City, there’s something extra special about having them prepared with the freshest, locally-sourced seasonal ingredients that literally go from farm-to-table.
Chef Magliulo’s new menu at La Posta Vecchia pays homage to some of these classics in his signature elegant and authentic approach, featuring a lineup of dishes including pillowy Roman dumplings with corn semolina, succulent local porchetta that melts in your mouth, and grilled asparagus. Each dish is a tribute to Roman flavours, techniques and culinary traditions, while also celebrating the enduring excellence of Italy’s culinary culture which is based on simple, fresh and expertly prepared fare.
Seasonal inspiration
All of the menus across our three hotels are seasonal, and based on the freshest produce and ingredients available throughout the year. This ensures guests are treated to the most authentic experience of each location and region, and are also inspired to connect more deeply with what’s happening in the communities surrounding our hotels.
Lazio has dozens of food and wine sagre throughout the year, each one dedicated to a specific ingredient or artisanal product that’s likely to feature on La Posta Vecchia’s menu in some form or another.
Ladispoli’s Sagra del Carciofo Romanesco (Artichoke Festival) is one we look forward to every year, an event that draws crowds from far and wide every April and is a must for guests staying at La Posta Vecchia at the time!
